The cold brew process is remarkably simple in principle, but as with all things that appear straightforward, it's the attention to detail that separates the bean from the pericarp.
The coffee then. Ethically traded beans (of course), roasted to a medium-dark bold blend, then coarsely ground for maximum steeping potential. Here's a picture look.
Allowing the coffee to gently rest in cool filtered water provides the ideal environment for the unique flavours to just drift out. Compared to traditional brewing methods, involving high pressure and scalding hot water, it's just so much more ...civilised.
More importantly, cold brewing leads to a significant reduction in the amount of bitter acids and oils released from the coffee - which is exactly why Cooper’s tastes so smooth. And what's more, less bitterness means the individual tasting notes are so much more pronounced.
After steeping, the grounds are removed using our dual filtering process and the rich, smooth concentrate bottled and refrigerated, where it remains fresh for up to 4 weeks.
